THE ION EXCHANGE TECHNIQUE FOR THE TARTARIC STABILIZATION OF WINES
Advantages:
- Reduction of pH in musts and wines.
- Better organoleptic characteristics.
- Calcium ion management.
After several years of research we have tested and perfected a technique for the reduction of potassium in white and red wines and grape musts.
The activation procedure and the KALIUM PIU’ system allow you to eliminate only the desired quantity of potassium, so as to guarantee perfect tartaric stability without negatively altering the characteristics of the wine.
The process is fast, does not require the use of particularly specialized workers, does not involve any type of increase or addition of foreign substances to what is normally contained in the wine. The main feature of the plant is its high potential, with its use tartaric stability is obtained in a short time and there are also positive related effects such as:
– The increase in acidity in tartaric acid.
– Lowering the pH.
– The color enhancement in red wines.
– The elimination of certain molecules responsible for negative odors.
Other unwanted ions such as calcium, iron and copper are also partially eliminated by the system. This results in a reduction of the risks that the presence of these ions entails, just think of the ferric and copper ions.
Finally, it is extremely interesting to be able to work on the musts before fermentation, in order to regulate the pH so as to allow greater protection from bacterial attacks, such as Brettanomyces, which could negatively influence the correct progress of the alcoholic fermentation and the quality of the wines.
In the AUTOMATIC version, the system autonomously manages the treatment phase thanks to the electronic pH-meter and warns the operator when it is necessary to move on to the regeneration phase. Also thanks to the electronic pH-meter, it is possible to correctly manage the regeneration and rinsing phases.

The machine can be equipped with the KALIUM TEST analysis kit (Optional) which includes:
- Operating unit for determining the tartaric stability of wines with the possibility of connecting to a PC, for the computerized management of the work carried out, complete with electronic printer of the test results.
- Two “Mini test” reactors for white wine and red wine already loaded to carry out 25/40 analyses each, complete with two refill cartridges for a further 25/40 tests each.
- Laboratory accessories for the correct use of the KALIUM TEST analysis kit.
The automatic Kalium Più systems, suitable for the treatment of musts and wines, have the following characteristics:
- A treatment column made of acid-resistant material, with an interior in food-grade polyethylene and an exterior in fiberglass. The passage of regenerating solutions based on strong acids inside the columns discourages the use of stainless steel.
- Models with 2 columns are also available: one for white wine and one for red and rosé wine.
- Strong cationic resin.
- Fixed base frame made entirely of carbon steel treated with electrostatic coating.
- Centrifugal process pump, low flow rate to ensure slow flow inside the columns, made of Aisi 304 stainless steel.
- Piston type dosing pump for the regenerating solution complete with connections and pipes made of special acid-proof material.
- Piston type dosing pump for neutralization solution complete with connections and pipes in special material resistant to highly alkaline products. (from mod. K3 and above).
- In-line electronic pH meter for automatic management of treatment and regeneration processes.
- In-line electronic conductivity meter for automatic management of the various rinsing phases.
- Electronic magnetic pulse flow meter, with a precision of 0.05%, for the automatic management of the percentage of wine to be treated.
- Flow control and sorting valves with pneumatic actuator, complete with control solenoid valves.
- Inert gas and pneumatic systems made with Rilsan pipe diam. 8 mm., complete with independent pressure regulators and condensate separation filters.
- Garolla 40 wine and water inlet/outlet connections (other types available on request).
- Resin treatment solution inlet connections with ½” rubber holder.
- Wash water inlet/outlet connections with hose holder 1”.
- Quick nitrogen connection Rilsan diam. 8 mm.
- Quick Rilsan compressed air connection diam. 8 mm.
- PVC control panel in compliance with CE standards.
- PLC programmer for automatic management of the various processing phases.
- Touch screen keyboard with manual, semi-automatic and automatic working options.
